Homemade Macaroni and Cheese. For any Catholic kid growing up in the 60’s and 70’s it was the go-to Friday night dinner. It’s also the definition of comfort food. I am ashamed to admit that when my kids were growing up, I didn’t make this. I know, I really am mortified. I made the blue box Kraft Macaroni and Cheese. Both of my kids loved it and it was something I knew they would always eat. Plus it was easy and fast.
A few years ago, when I started cooking for my parents, my Dad asked me to make my Mom’s homemade version of Mac and Cheese. I took her recipe and combined it with one from my friend, Patti…who by the way is one of those amazing, old fashioned cooks. Everything from scratch and delicious. That combo is what I’m sharing today.
Patti doesn’t bake hers and either did my Mom. I like the way the topping adds a little bit of texture and crunchiness. It also looks really good straight out of the oven.
The winner of my Spring Wreath giveaway is Annelies. (Don’t you love that name?) I’ve sent her an email so I hope she responds. If not, I’ll pick another winner tomorrow. Happy Friday…
