Before we get started talking about these apple breakfast muffins, I have a little back story to share. When my kids were young, I wasn’t very good at breakfast. I didn’t get up and make pancakes before we went to school. (Does anyone really do that?) My daughter wasn’t a breakfast eater anyway, and my son was perfectly satisfied with a bowl of cereal. Or at least I thought he was. If I had known how easy it is to make a healthy, but homemade breakfast I think I would have been better at it. These muffins were easy and quick to throw together. They are moist and when you hit a bite of apple, it’s like hitting the jackpot. They don’t have anything weird in them that kids wouldn’t like. In fact, I would say they are very kid friendly. I wish I could go back, make these for breakfast and hear what my kids had to say. Of course I can’t, so I’m sharing them with the hope that someone out there does it for me. Here’s the recipe…I made a dozen regular sized muffins but you could make mini muffins for smaller servings. I used Gala apples because Honeycrisp aren’t out yet. The Gala worked really well and did not turn to mush. I considered putting a streusel topping on them but that would cut down on the healthy factor. If you weren’t worried about that I think a streusel would be amazing.
