Every once in a while, in the depths of my recipe box, I come across a card that I don’t ever remember making. This fresh lemon cake is one of those recipes. I found it while I was looking for something else…and thought it looked pretty good and very easy. It turns out that this cake is both! In fact pretty good is an understatement.
This is one of those desserts that if I didn’t give part of it away, I would have eaten the entire thing myself. It literally melts in your mouth. It makes an 8 x 8 pan but I am sure it could be doubled to make a 9 x 13. As always when I use citrus in a dessert, the best part is zesting. When I was finished with everything I had some left over fresh lemon juice that I could not pour down the sink. Just couldn’t do it…so I made a big jar of Lemon Mint Cooler. I sometimes have to make myself drink water but not today. I finished the whole jar. No problem.The glaze is a very light topping but if you wanted to leave it off, just a dusting of powdered sugar would be delicious.
