A few days ago I got a comment on a post from a lovely new blogger named Mila. I had never seen her name before so I clicked over to visit her blog. It’s as lovely as she is…but what really caught my eye was a post she wrote featuring her easy, low-fat granola. I read the ingredients and wondered if I had them all. I told myself that if I did, it was meant to be.
I didn’t actually have the correct ingredients. Mila’s recipe called for rolled oats and all I had was instant oatmeal. I had partial bags of walnuts and pecans in the freezer. Mila used almonds which would be amazing but I was fresh out of almonds. I used what I had and in just a few minutes I had a batch of homemade granola in the oven.
I wish you could have smelled my kitchen as it neared the end of it’s baking time. After it cooled, I poured it into one of my vintage Ball jars. I’ve been sprinkling it on my Cheerios in the morning or on greek yogurt for lunch.
