6. EASY AND DELICIOUS SHORTBREAD COOKIES: Preheat oven to 325 °. Beat 1 1/2 cups softened salted butter with 1 cup powdered sugar with a mixer until light and fluffy. Stir in 3 cups of all-purpose flour until everything is combined. Don’t overmix. Put the cookie dough in a gallon-size ziplock bag and, using a rolling pin, flatten it out evenly to fill the bag. Carefully cut away the bag with a knife. Using a pizza cutter, cut cookies into rectangles and pierce each cookie three times with a fork. Put the unbaked cookies on rimmed cookie sheets lined with parchment paper and refrigerate the cookie sheet for about 30 minutes. Bake them for 15-18 minutes until the bottoms are lightly brown. Let the cookies sit on the cookie sheets for a few minutes before cooling them on a wire rack. If desired, drizzle with melted chocolate.

7. FUN AND INTERESTING FACTS: What is a full moon called in February, and when is it this month? We saw our first Robin here last week. What states claim the Robin as their state bird?

.) NEW ON THE BLOG: All family favorites, these 13 mouthwatering soup recipes will warm your soul and make dinnertime wonderful.

.) Click HERE to look at a collection of Amazon products I own and love.

.) FAVORITE QUOTE: “Don’t let anyone who hasn’t been in your shoes tell you how to tie your laces.”

.) BEAUTIFUL HOME INSPIRATION: See the transformation of this Cape Cod style home that was 10 years in the making, and tour this light and bright cottage in Nova Scotia that has the most amazing planked ceilings.

.) My favorite trick for cooking a meatloaf evenly + quickly: use an 8 x 8 inch square baking dish. Make your favorite recipe, and dump the meatloaf mix into the baking dish. (Spray it first with nonstick spray.) Pat the mixture down to the edges of the pan, making sure it’s evenly spread out. I use 1.5 lbs. of ground beef, and I bake the meatloaf for 35 minutes at 375 degrees F. Make perfect sandwiches, hamburger buns work best, by simply cutting the baked meatloaf into squares.

.) Even if you don’t really like to bake, or don’t have time, I hope you try these strawberry scones. They are easy and so good!

.) Have you started adding spring accents to your decor? I haven’t yet, but I’m on the lookout for some new accessories. Here’s what I’ve found so far: I ordered these yellow pillow covers to add a pop of yellow to our living room. For outside, I want this doormat, and this fern and ivy wreath. The wreath could stay on your door all the way through fall, but it’s especially perfect for spring and summer.

.) This Tennessee cottage is one of my all-time favorite homes ever. I love the all-white kitchen, the warm wood in the dining room, and the loft space is functional but so cozy. Go slowly through the images, and get inspiration for your own home!

.) That’s it for me. Wishing you all some sunshine and peace. XO
