10. CULINARY CORNER: Stuffed Acorn Squash With Sausage: Preheat oven to 400°. Cut 2 acorn squash in half with a sharp knife from stem to end. Scoop out the seeds and stringy core. Arrange the squash cut-side up on a baking sheet and brush with 1 tsp. olive oil. Salt and pepper. Bake for 40 minutes. Remove squash when the inside is fork tender and set aside. Reduce heat to 375°. While the squash is baking, heat 2 TBS olive oil in a pan over medium-high heat. Cook 2 links of Italian sausage, casing removed. Brown the meat and crumble for 3 minutes. Add 8 oz. of finely diced cremini mushrooms, 1 small diced onion, 1 chopped apple (Peel on or off), 1/2 tsp salt, 1/4 tsp pepper, 1/4 tsp nutmeg, and 2 minced cloves of garlic to the pan and cook until the mushrooms have given up their liquid and it cooks off, about 8 minutes. When the squash is cool enough to handle, scoop out the flesh, leaving about 1/4 inch wall around the acorn. Put the scooped squash into the meat mixture with 1 TBS finely chopped fresh sage and 1/4 cup Parmesan Cheese. Mix to combine. Mound the ingredients in the acorn squash and sprinkle with another 1/4 cup Parmesan cheese. Bake for 15 minutes. Enjoy!

ANSWER TO #7: Historians feel Thanksgiving was originally celebrated in mid-October, similar to the Canadian Thanksgiving. The first Jack-O-Lanterns were made from turnips or potatoes. Now you know!
