9. CULINARY CORNER: Lemon Ricotta Cookies– Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Whisk together 1 cup all-purpose flour, 1/2 teaspoon baking powder, and a pinch of salt in a large bowl. In another bowl, cream 1/2 cup sugar with 1/4 cup unsalted butter until light and fluffy. Beat in 1/2 cup whole milk ricotta cheese and the zest of 1 lemon. Add 1 large egg and mix until smooth. Combine dry ingredients into wet ingredients until just combined. Drop tablespoonfuls of batter onto a prepared baking sheet, spacing about 2 inches apart. Bake for about 15 minutes or until the edges are golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
