9. CULINARY CORNER: Prosciutto Asparagus Bundles: Preheat the oven to 425 °. Line a sheet pan with parchment paper. Roll out two puff pastry sheets on a floured surface to double their size and cut each into six squares. Toss one bunch of fresh asparagus with 1 TBS of olive oil and set aside. Season each puff pastry square with salt and pepper. Divide and sprinkle 8 oz. gruyere cheese between the squares, then top with a slice of prosciutto. Add 3-4 asparagus spears on top of the prosciutto. Lay the asparagus on the puff pastry with the tops on one of the points. Fold the side points of the puff pastry over the asparagus, sealing the edges with an egg wash to form a bundle. Place each bundle seam side down on the prepared sheet pan. Brush each bundle with more egg wash. Bake in the preheated oven until the pastry is golden brown, about 12-15 minutes. Serve immediately.
