9. CULINARY CORNER: Rolled Chicken With Feta, Spinach, And Sundried Tomatoes: Preheat your oven to 375°F. Place 4 boneless, skinless chicken breasts between plastic wrap and pound to 1/2 inch thick. Mix 1 cup chopped spinach, 1/2 cup crumbled feta cheese, and 1/3 cup chopped sun-dried tomatoes in a large bowl. Add 2 minced garlic cloves, salt, and pepper to taste and mix. Divide the filling among the chicken breasts, spreading it evenly across each one. Roll up the chicken tightly and secure with toothpicks. Place the rolled chicken in the prepared baking dish, seam side down. Brush the tops of the chicken with olive oil and season with salt and pepper. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through. Remove from oven, let rest for a few minutes, then remove toothpicks and serve with Nani’s Sauteed Rice.

WHAT I’M READING: I’ve known about this concept for a while and have been curious about reading the book, but now that we’re cleaning out my mother-in-law’s home, I decided to read The Gentle Art of Swedish Death Cleaning by Margareta Magnusson, a charming little book that has nothing to do with death and everything to do with decluttering (as clarified in the tagline, ‘How To Free Yourself and Your Family from a Lifetime of Clutter’).

9. WHAT’S INSPIRING ME AROUND THE WEB: I’ve been a fan of understated elegance for years, so I just love that “Quiet Luxury” has become a trend. Here’s an on-point video that sums up what quiet luxury is and how to use it in your home.
