9. CULINARY CORNER: Southern Breakfast Meatballs: Preheat the oven to 375°. Line a rimmed baking pan with foil. In a large bowl, combine 32 ounces bulk pork sausage, 1 cup panko breadcrumbs, ½ cup diced yellow onion, 1/4 cup chopped fresh parsley, 2 large eggs, 1 teaspoon black pepper, and ¾ teaspoon salt. Mix gently with your hands until just combined. Shape the mixture into 1½-inch balls and place them on the prepared baking pan. Bake for 20 to 25 minutes, or until golden brown and cooked through.

Meanwhile, in a large skillet over medium heat, melt 2 tablespoons butter and 1 tablespoon bacon drippings. Add 2 tablespoons all-purpose flour and cook, stirring constantly, for about 1 to 2 minutes or until the mixture turns light golden. Gradually whisk in 1½ cups 2% milk, stirring until smooth. Add the remaining 1 teaspoon black pepper and ¾ teaspoon salt. Continue to cook, whisking often, until the gravy thickens, about 3 to 5 minutes. Serve the sausage balls hot with the creamy gravy spooned over the top or served on the side for dipping.
