In a large bowl, whisk together 1/2 cup canola oil, 1/2 cup sugar, 1/2 cup brown sugar, 2 large eggs, and 1/2 cup milk. Add 1 teaspoon vanilla extract and mix well.
In another bowl, whisk together 2 cups all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1/2 teaspoon cinnamon. Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in 1 cup diced rhubarb and 1 cup diced strawberries.
Scoop the batter into the muffin tin, filling each cup about 3/4 full.
Bake for 20–25 minutes or until a toothpick inserted in the center comes clean. Cool in the pan for 5 minutes, then transfer to a wire rack. Enjoy!
