9. CULINARY CORNER: Chicken Eugene– I’m having a Galentine Dinner for friends this weekend and making this easy and elegant throw-back dish: Brine 8 boneless, skinless chicken breasts for 1 hour. Preheat oven to 350°. In the bottom of a deep 9 x 13 pan, add 8 thick slices of deli ham (slices overlap). Put 8 brined chicken breasts on top of the ham. In a small saucepan, heat 1 can mushroom soup and 1/2 stick of butter and stir to combine. Turn off the heat and stir in 8oz of sour cream and 1/2 cup marsala wine. Pour the sauce over the chicken and sprinkle 1 TBS paprika over the dish. Cover with foil and bake for 45 minutes until done.

10. THE LAST WORD: Happy Valentine’s Day! Tell someone you love them!

ANSWER TO #7: Teachers are the number 1 recipients of Valentines. Juliet from Romeo and Juliet gets thousands of Valentines sent to Verona, Italy.
