Strawberry Lemon Shortbread Bars
Strawberry Lemon Shortbread Bars: a quick and easy dessert that gets its incredible taste from fresh lemon and strawberries. The perfect shortbread recipe.
Zest of 2 lemons
about 2 small lemons
Powdered sugar for dusting
Preheat oven to 350 degrees F.
In a large mixing bowl, cream butter and sugar until fluffy.
Add egg, 2-3 Tablespoons lemon zest, and lemon juice
In a separate bowl, whisk together flour, baking powder and salt.
Slowly add dry mixture to batter just until combined.
Fold in strawberries.
Put dough into prepared 9 x 9 pan and spread to the edges with a large spoon.
Bake 35 - 40 min. until golden on top and knife inserted in center comes out clean.
Dust with powdered sugar if desired
