Ingredients

uncooked oats
(quick or old fashioned)

cup
boiling water
1
cup
brown sugar
1/2
cup
butter softened
2
eggs
1
teaspoon
pure vanilla extract
1 1/2
cup
Flour
1
teaspoon
baking soda
1 1/2
teaspoon
baking powder
1/2
teaspoon
Cinnamon
1/2
teaspoon
salt
(use 1/4 teaspoon if using salted butter)
powdered sugar for dusting
Instructions
Preheat oven to 350 degrees F.
Place the oatmeal in a medium bowl and add the boiling water.
Stir and let cool.
In a large mixing bowl, combine the brown sugar, butter, eggs, and vanilla. Mix until well combined and fluffy.
Add flour, baking powder, baking soda, cinnamon, and salt.
Mix well, making sure to scrape the bottom and sides of bowl.
Add oat mixture and mix until combined.
Pour into 8 x 8 inch prepared pan.
Bake 25 - 30 minutes until knife inserted in the middle comes out clean. Do not overbake.
Cool. Sprinkle with powdered sugar.
