Vanilla Pudding Snickerdoodle Cake Recipe

This vanilla pudding snickerdoodle cake recipe has just 6 ingredients, and one of them is a cake mix! It's easy, delicious, and quick to make.

For the Cake

  • 1 box yellow cake mix
  • 5 single serve vanilla pudding cups (3.25 oz. each)
  • 2 eggs
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 cup cinnamon chips

For the Brown Sugar Whipped Topping

  • 1 8 oz. container Cool Whip or any whipped topping
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon


  • Preheat oven to 350 degrees F.
  • In the bowl of a stand mixer, or a large mixing bowl, add the cake mix, pudding cups, and eggs.
  • Mix on low speed just until combined. Turn mixer up to medium-high and beat for 2 minutes.
  • Put cake batter into prepared 9 x 13 inch baking pan.
  • In a small bowl, mix together 1/2 cup sugar and 1 teaspoon cinnamon.
  • Sprinkle cinnamon/sugar mixture evenly on cake batter.
  • Top with the cinnamon chips.
  • Bake for 30 minutes, or until a knife inserted in the center of the cake comes out clean.
  • Cool and serve with brown sugar whipped topping.
  • To prepare the brown sugar whipping topping: add the brown sugar and cinnamon to the 8 oz. container of whipped topping. Stir well. Refrigerate until ready to use.
