May always feels like a turning point. The house begins to shift into a lighter rhythm, and the days seem to offer just a little more time to enjoy it. The porch is ready for summer, the living room has been refreshed, and meals have taken a simpler turn with fresh salads in place of cold weather soups. Evenings are stretching out in the best way, and I find myself wanting to make the most of them before the heat settles in. There are herbs waiting to be planted, small projects being checked off, and a quiet sense that a new season is settling in nicely.

3.) Summer Comforts
I’ve discovered a simple ginger tea that’s become one of my favorite afternoon rituals. My sister-in-law told me about it, and it’s very soothing, especially on days when my stomach feels a little unsettled. Thinly slice fresh ginger root and simmer it with water and a few sprigs of mint, which gives the tea a fresh flavor that’s both calming and refreshing. For every 2 cups of water, use about 1 inch of fresh ginger root. This makes a strong tea, but it can be easily adjusted by adding more water.

After simmering for about 20 minutes, I strain the tea and store it in the refrigerator so it’s ready whenever I want a cup. I love to add honey, lemon, and an extra sprig of mint. I’m on my second batch, and find myself looking forward to it every day. It’s such an easy homemade drink, but it feels special every time I make it.

Easy side dishes are a must this time of year, especially when meals tend to be a little more relaxed and often shared. These roasted vegetables are simple to prepare and bring so much color to the table, while this vegetable gratin is a warm, comforting option that still feels just right for summer. They’re easy, flexible dishes that work for everything from weeknight dinners to casual gatherings.
