Hey there everybody…just popping in to share this super simple soup recipe. (Try saying that 3 times…)
This is one of those recipes that you can change up to fit your family’s tastes, likes and dislikes. Personally, I can’t stand lima beans so I don’t put them in this soup. If you adore lima beans…definitely dump them in! My mom always put in cabbage but I don’t like that either. The squash family (zucchini, acorn squash, etc.) tends to get really mushy. Most other vegetables work fine.
I use canned goods straight off the grocery store shelf. If you have juice or veggies you have canned yourself…all the better. Less preservatives for sure.
Don’t be tempted to add more pasta. It somehow takes on a life of its own and multiplies like mad.
Don’t skip the bay leaf or celery salt. They really do add that extra something.
This makes a ton and freezes well. When it’s cooking, the scent fills your house and just screams comfort food.

Love vegetable soup. A comfort food that is healthy, too. This looks quite a bit like my vegetable soup only I add potatoes instead of pasta. Wish I could try a bowl of yours for my lunch today!

I love homemade vegetable soup! My MIL buys it from some lady that makes it and sells it. She always buys extra for us to keep in the freezer. Your recipe looks delicious. I’ve never made it myself because I thought it was too complicated, but your recipe looks like I could do it! I’m going to save this and give it a try. With the cooler weather on the way, it would be nice to start cooking in the afternoon and enjoy it for dinner. Thanks for sharing it!

Love hearty soups when it’s cool weather. This looks very similar to mine. I throw in a ton of veggies, some at the end. Makes me feel like we’re eating healthy. :)
