brownie recipe easy bite on spoon

Did you ever have one of those days when everything is going wrong, and the only thing that will make the day better is chocolate? If the answer to that question is “yes,” you are in the right place. I get myself into trouble when I have days like this, because most of the time I end up making a big batch of cookies…or a whole chocolate cake. These are the days when we need portion control more than ever, and this brownie recipe is exactly that.

  • 1 tablespoon cocoa powder
  • 1 tablespoon vegetable oil or canola oil

  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons semi-sweet chocolate chips – peanut butter chips, milk chocolate chips, or dark chocolate chips can be used as well.

Helpful Tips

  • This is not a huge brownie, but it’s very rich, so it is more than enough for one person. To serve two people, make a double batch, and divide it into two ramekins. Cook them separately in the microwave.
  • I use a four ounce ramekin that measures 3.5 inches in diameter and 1.75 inches tall.
  • You can mix and then cook the batter in the same bowl, but it tends to stick while cooking. For best results and easier clean-up, prepare in one bowl, and cook in a second bowl or cup that’s been prepared with non-stick spray.
  • You may have to adjust the bake time, but don’t overcook. Your brownie will have a crackly top, but should be gooey in the middle.
  • This easy dessert can be served warm or you can let it cool to room temperature.
  • This best brownie recipe can be topped with whipped cream or ice cream.

Make-Ahead Version

  • In a large bowl, whisk together 1 cup all purpose flour, 1 cup white sugar, and 1/2 cup cocoa powder.
  • Store in an airtight container.

When you are ready to make a brownie, substitute 1/3 cup of the brownie mix (level) for the flour, sugar, and cocoa. Follow the rest of the recipe as is.

This delicious brownie recipe for one is for “emergencies” only…clearly it’s not something to make every day. But it’s nice to have something like this in your recipe collection for the next time you need a chocolate fix!

I just printed your Best Brownie Recipe even knowing you need to correct the cook/total time. Fifty seconds not minutes. Looking forward to making/enjoying this.

Hi Ann! Thanks for this easy emergency recipe. I’ve never had a sweet tooth and very rarely ate anything sweet in my life until I hit 50! Then POW, some kind of switch turned on and I just couldn’t get enough chocolate! I’m 57 now and I’ve been on this roller coaster with chocolate cravings now for 7 long years, YIKES! Needless to say I’ve packed on the Pounds and I’ve got to break what has now become an addiction! Your recipe gives me “just enough” without the leftovers to deal with trying not to eat, lol! I’ve lost some of the weight I put on and am trying to find more healthy things to snack on. But every now and then, a girls just got to have a little chocolate! Thanks for the recipe!
Enjoy the rest of your week! P.S. the only thing I’m going to do differently is add a few chopped pecans! 😊
