Any kind will work! If you have a good homemade eggnog recipe, definitely  use that. If you want to make sure this mocktail is gluten-free, use Southern Comfort eggnong. According to their website, you will be safe. Dairy free eggnog is also widely available, so that would be a good choice if you need a lactose-free drink. 

Eggnog ingredients: egg yolks, sugar, milk, cream, spices. The spices are usually a mixture of vanilla, cinnamon, nutmeg, and salt.  Most recipes call for cooking the eggs in a saucepan on the stove, which I highly recommend. My dad used to make homemade eggnog in an old blender, and we all drank the raw eggs. Clearly it didn’t hurt us, but I wouldn’t do that now!

Technically, yes. But this recipe calls for such a small amount, that I would definitely feel comfortable serving this mocktail to people of all ages. 

Extracts are made with alcohol, and emulsions are made with water and vegetable gum. Emulsions don’t evaporate as quickly, and may have a more potent flavor. I love trying new things, and this rum emulsion worked great…but rum extract will work just as well!
