If you’re looking for a sweet treat that’s easy to make and doesn’t require an oven, icebox cakes are the way to go! These no-bake desserts are layered with creamy fillings and graham crackers, and then chilled until they’re irresistibly delicious. Today I’m featuring seven icebox cake recipes that are guaranteed to please the whole family. Whether you love classic flavors or want to try something new, these recipes will make coming up with an easy dessert a breeze!

Icebox Cake Basics

  • Icebox cakes are assembled in layers, with two elements: the filling and graham crackers.
  • The base for any icebox cake filling is a container of Cool Whip. Other ingredients can include cream cheese, powdered sugar, sweetened condensed milk, fruit, juice concentrate, etc.
  • One regular size box (14 oz.) of graham crackers makes about one icebox cake.
  • Make the filling first. Try to keep the ingredients as cold as possible.
  • Use a stand mixer or a large bowl with a hand mixer.
  • Always add the Cool Whip last, and fold it in by hand with a large spatula.
  • A square baking dish is a must. A 9 x 9 inch pan works well, but an 8 x 8 inch pan will give you thicker layers.
  • Always begin with a thin layer of the filling on the bottom. Alternate filling with graham crackers.
  • Try to get as many layers as you can. The number of layers will vary depending on the recipe ingredients.
  • This is not an exact science. Don’t worry about how the graham crackers fit into the baking dish.
  • All icebox cakes need to be refrigerated for at least 6 hours, but overnight is best. Cover the pan loosely with foil. The longer they sit, the better they taste!
  • Before cutting, run your knife under very hot water. The warm knife will cut the icebox cake much easier and there won’t be any ragged edges. The first piece is sometimes hard to get out of the pan. Save that one for yourself!

Can I use real whipped cream?

I’ve been asked many times if real whipped cream can be substituted for the Cool Whip in an icebox cake recipe. Although I have never tried it, I believe it will work. Make sure to use a whipped cream stabilizer.

Pineapple Fluff Icebox Cake

  • Filling
    • 8 oz. softened cream cheese
    • 3/4 cup powdered sugar
    • 16 oz. Cool Whip
    • 20 oz. can crushed pineapple DRAINED
  • Layer this filling mixture with graham crackers.
  • Top with toasted coconut. (Preheat oven to 325 degrees F. Spread coconut flakes on a cookie sheet. Bake for 8 to 10 minutes. Shake the pan halfway through baking. Flakes should be very light brown.)

  • Filling
