1. CAN I USE THE CUISINART ICE CREAM MAKER WITH ANY RECIPE?

Yes. The thing to pay attention to is the amount of liquid you put into the freezer bowl. Do not overfill it. The magic number when it comes to the combination of liquids is 3 cups. (For this lemon ice cream I used 1 1/2 cups milk, 1 cup heavy cream, and 1/2 cup lemon juice. It all equals 3 cups.)

2. HOW CAN I MAKE THIS LACTOSE-FREE?

Use a2 milk . I substituted 2.5 cups of a2 (it was 2%) for the whole milk and heavy cream. It was delicious!

3. CAN LOWER FAT MILK AND CREAM BE USED?

Yes...definitely. Keep in mind though that the higher fat products are what makes the ice cream rich and creamy. If less fat is used, the texture will be different, as well as the consistency.
