After a long stretch of gray Ohio skies, I was ready for something cheerful, and this little project was exactly what I needed. 9. CULINARY CORNER: Starbucks Lemon Loaf: Preheat the oven to 350°F (175°C). Grease two 8×4-inch loaf pans.. In a large mixing bowl, combine 1 (15.25-ounce) package yellow cake mix, 1 (3.4-ounce) package instant lemon pudding mix, 1/2 cup vegetable oil, 1/2 cup water, 4 large eggs, 1/2 cup sour cream, and 8 tablespoons lemon juice. Mix until smooth and well combined. Pour the batter evenly into the prepared loaf pans and smooth the tops. Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean. Let the loaves cool in the pans for 10 minutes, then remove to a wire rack to cool completely. To make the glaze, whisk together 1 1/2 cups confectioners’ sugar, 3 tablespoons lemon juice, and zest of 1 lemon in a small bowl until smooth. Drizzle the glaze over the cooled loaves.
