WHAT IS THE DIFFERENCE BETWEEN UNSULPHURED AND BLACKSTRAP MOLASSES?

Unsulphured molasses is made from ripe sugarcane and has a mild, sweet flavor that works well in baking. Blackstrap molasses is much darker, thicker, and less sweet. It has a strong, slightly bitter taste, so it isn’t a good substitute in this recipe.

CAN I FREEZE THESE MUFFINS?

Yes! Feel free to bake ahead and store these tasty treats in the freezer. Use a resealable freezer bag and make sure to mark the date on the bag. Freeze for up to 3 months.

WHAT IF I DON'T HAVE SANDING SUGAR?

That’s perfectly fine. The sanding sugar simply adds a little sparkle on top. You can use granulated sugar instead, but it may melt into the batter and won’t be as visible after baking.

CAN I MAKE THIS RECIPE WITHOUT MOLASSES?

Yes...but the batter will be much lighter in color, and the gingerbread taste won't be as noticeable. Just use 1 cup of milk if you would rather not use molasses.

WHY THE TWO DIFFERENT OVEN TEMPS?

Starting the muffins at a higher temperature activates the leavening, and helps the batter rise quickly so the tops form a nice dome. After the first few minutes, lowering the oven temp lets the muffins finish baking without drying out. This method gives you a taller, well-shaped muffin with a soft center.
